My sister gave me some cooking apples from the tree in her garden and I wanted to make something different to a pie or crumble with them.
I wanted to make a cake that had big chunks of apples in it not grated or small pieces. I made this by putting a layer of apples in the middle of the almond cake. I am really pleased with the results.
It's a lovely light cake with nice chunks of apple running through it. It is delicious enjoyed as it is with a cuppa or with lashings of cream or custard!
To start pre-heat the oven to 180 degrees centigrade (160 fan) and line and grease a 23cm/ 9” square cake tin.
Melt the butter in a pan or in the microwave and set aside.
Peel, core and thinly slice the apples and place in a bowl with the lemon juice to stop them turning brown.
In the bowl of a stand mixer place the flour, ground almonds, baking powder, sugar, eggs, almond extract and melted butter.
Mix until everything is combined.
Put half the batter in the prepared tin and level.
Place the apple slices on top evenly distributed.
Put the rest of the batter over the apples and sprinkle with the flaked almonds.
Bake for 50 minutes or until a skewer comes out cleanly.
Leave to cool before cutting into slices.

Great recipe. Taste and texture were amazing. I found 1 eating apple was enough but I did cut the slices very thin as I was worried that thick slices would weigh the mixture down and prevent it from rising. Family loved it and I will definitely be making it again
