This is another cafe recipe!!! We made and sold lots of these. They contain a whole Terry’s Chocolate Orange and some fresh orange zest.
They are soft in the middle and crunchy around the edges and taste delicious. Chocolate and orange has always been a classic combination and you can’t fail when you pair these flavours in baking.
My Dad loves Chocolate Oranges and I always buy him one at Christmas. When I had my coffee shop he would pop in for a coffee and one of these biscuits if we had any left.
To start making these cookies preheat oven to 180 degrees centigrade (160 fan) or Gas Mark 4 then line 2 baking trays with parchment.
In a stand mixer beat the butter, caster sugar and light brown sugar until light and fluffy.
Add the vanilla extract and egg and mix again until incorporated.
Add the flour, cocoa, bicarbonate of soda, baking powder and salt until a soft dough has formed.
Chop the chocolate orange up roughly, zest the orange and add both to the dough and mix again.
Form into balls roughly the size of walnuts (approx 28g) and place on the baking trays. These cookies do spread a lot so don’t place them too closely together. You will need to bake several batches.
You will get roughly 18 cookies from the mix.
Bake for 12 minutes and don’t be tempted to bake any longer as they won’t be soft in the middle.
When they come out of the oven place a mini chocolate orange segment (if using) on top of each cookie straight away and leave the cookies to cool and set.
Transfer to a wire rack after a few minutes to cool completely.

100g Soft unsalted butter

Sarah’s extra slice......
Do not bake longer than 12 minutes the cookies will set as they cool.
The cookies spread a lot so make sure you leave lots of room between the cookies!
If you don’t have the orange segments you could sprinkle some chocolate chips on after baking if you want or just leave plain.
