This is my first recipe using my apple butter!
These cookies are made using the apple butter instead of an egg! The taste of the apples and cinnamon really comes through beautifully.
The oats really enhance the taste and texture and they make a lovely autumnal bake.
I have frozen some small batches of my apple butter so that I can make these cookies all year round.
Start by pre-heating the oven to 180 degrees centigrade (160 fan) and line 2 baking trays with baking parchment.
Put the butter, light brown sugar and demerara sugar into the bowl of a stand mixer and cream together.
Add the apple butter and mix again.
Then add the flour, baking powder, bicarbonate of soda, sultanas and rolled oats and mix again.
Roll the dough in your hands into walnut sized balls and place on the baking trays and flatten slightly. You will need to do a few batches.
Bake in the oven for 15 minutes.
Leave to cool and set on the trays before transferring to a cooling rack.

120g Soft unsalted butter
75g Soft light brown sugar
50g Demerara sugar
60g Apple butter
125g Plain flour
1/2 tsp Baking powder

This recipe makes approximately 18 cookies.
I used my homemade apple butter in this recipe.
You could use raisins instead of sultanas.
I used a small cookie scoop from IKEA to shape my cookies.
Goodness me but these are tasty. It’s worth making sure you’ve made the apple butter from your recipe beforehand and maybe have some in the freezer so you can make them really quickly and easily. The recipe is so simple and easy to follow, they are a bit like a lovely soft appley hobnob. Love them. X
